Mini Apple Pie with Sweet Pastry Crust


I like sweet pastry crust as it has a cookie-like texture that is great for apple pie.  To make my pie extra crunchy, I top it with crumble toppings.  This recipe might be time consuming and has quite a number of steps to follow, but it is worth the effort. 


Ingredients

Sweet Pastry Crust

1)  195g flour
2)  110g unsalted butter
3)  50g sugar
4)  1/8 tsp salt
5)  1 egg (beaten)


Apple Fillings

1)  2 apples (slice thinly)
2)  1/4 tsp cinnamon
3)  1 tbsp flour
4)  20g sugar
5)  juice of 1/4 lemon

Crumble Toppings

1)  30g butter
2)  40g flour
3)  20g sugar
4)  1/4 tsp cinnamon

Method
Pre-heat oven  :  200 degree Celsius
Removable Pie Pan  :  15 cm (diameter)

Sweet Pastry Crust

1)  Beat butter until soften




2)  Add sugar and beat until light and fluffy
3)  Add egg gradually and beat until incorporated



4)  Add flour and salt and mix until it can be formed into a ball




5)  Flatten pastry into a disk
6)  Cover with plastic wrap and refrigerate for 15-30 mins.


7)  Mould 1/2 of the dough in a pie pan




Apple Fillings

1)  Slice apples thinly.  Add lemon juice to prevent apples from turning brown.

Apple and Lemon Juice

2)  Add cinnamon, flour and sugar and mix well


3)  Arrange apples into pie pan




Crumble Topping

1)  Rub butter, sugar, flour and cinnamon until it turns grainy



Baking
1)  Bake apple pie without toppings in a 200 degree celsius oven for 30 mins

2)  Lay a layer of crumble onto the pie and bake in a 180 degree Celsius oven for 15 mins until toppings turn brown.

Mian Jian Guo 面煎粿

Mian Jian Guo (面煎粿) is my comfort food.  I love the smell and taste of peanut fillings.  In this recipe, I am using peanut powder and toasted sesame seeds, but my favourite filling is thick peanut butter.  I hope I can find or create the peanut butter filling which I like someday.    


Ingredients (adopted from Meat man)

1.  130 g flour
2.  2 tbsp sugar
3.  1/2 tsp baking soda
4.  1/2 tsp instant yeast
5.  1 egg
6.  160 ml lukewarm water

 
Filling
  1. 50g ground peanuts powder ( I got mine from Phoon Huat.  Alternatively, you make your own peanuts powder by using a blender.)
  2. 15g toasted white sesame seeds
  3. 25g sugar
Method

  1. Add plain flour, baking soda, yeast, sugar, egg, lukewarm to a bowl.  Mix batter till smooth.
Whisk all ingredients
     2. Cover loosely, and let it proof for 30mins.
     3. Apply oil to a non stick pan on low heat and spread evenly with paper towel.
     4. After pan is heated evenly, add batter, cover and cook for 4 mins.
Pour batter in a non-stick pan
     5. Add fillings and cover pan with lid.  Cook for another 2-3 mins.
     6. Fold into half with spatula, cut and serve
Fillings
  1. Toast white sesame seeds in pan till slightly brown.
  2. Add sesame seeds to peanuts powder and sugar and mix them together.

Soy Sauce Chicken Wings



I love to watch 'Home Food Rescue' by Mr Baek.  He teaches easy to prepare recipe.  I will faithfully copy all his recipes and the methods in my notebook while watching the show.  Of course, my hubby and children are my guinea pigs, happy ones in this case.   I wanted to cook a chicken wings dish as we had not have chicken wings for quite a while.  Dishing out my recipe note book, this chicken wings recipe seems easy and fuss free.  All I had to do was to assemble all the ingredients and let it simmer while cleaning the house.  The end product was sweet and tender chicken wings.




Chicken wings, spring onions, chilli, slices of ginger
Ingredients

1.  1 kg chicken wings
2.  5 slices ginger
3.  1 tbsp. minced garlic
4.  A bunch of spring onion ( cut into sections)
5.  1 chilli ( slices )
6.  Sesame seeds (optional)


Sauce

1.  1/2 cup soy sauce
2.  1/2 cup sugar
3.  1 cup water





Method

1.  Wash chicken wings.
2.  Place chicken wings and all the other ingredients (except chilli) into a cooking pot.
3.  Simmer in medium heat until sauce thicken.
4.  Add chilli and continue to simmer in low heat until no more liquid.

Add chopped chillies when sauce thickens
5.  Serve with sesame seeds.
