Aligo Oglio ...the Asian Way

Why Aligo Oglio the Asian way?  I replaced chilli flakes with dried chillies in this recipe as dried chillies can be easily purchased at any supermarket.


1.  1/2 pack of spaghetti
2.  8 slices of ham
3.  5 to 6 cloves of garlic
4.  8 dried chillies
5.  olive oil
6.  some parsley flakes
7.  salt


1.  Boil a pot of water.  Add some salt and olive oil to the water.
2.  Cook spaghetti in the boiling water as indicated.

3.  Slice garlic thinly.

4.  Cut dried chilli and remove seeds.

5.  Cut ham into small cubes and fried.

6.  Heat about 3 to 4 tablespoons of olive oil in a pan.  Add garlic and dried chillies.

7.  Add spaghetti and stir well.
8.  Add salt to taste.
9.  Finally add parsley flakes.

Kung Pao Chicken 宮保雞丁

Kung Pao Chicken ( 宮保雞丁)


1.  200 g chicken filet (cut into bite size pieces)
2.  12 dried chillies  (de-seed)
3.  Some black pepper
4.  Some peanuts
5.  soy sauce
6.  sugar
7.  about 1 1/2 teaspoon corn starch
8.  1 teaspoon vinegar
9.  garlic (minced)
10.  spring onion (diced)


1.  Marinade chicken with some soy sauce and corn starch.
2.  Add oil into pan and stir fried chicken.
3.  When chicken is cooked, move them to the edge of the pan.
4.  Add black pepper and dried chillies into pan and gentle stir them until fragrant. 
5.  Stir in the chicken, add 2 tablespoons of water and sugar and stir-fry.
6.  Add minced garlic and spring onion and stir-fry for a few minutes.
7.  Remove from heat.  Gentle pour vinegar around the edge of the pan.
8.  Add peanuts and stir well.

1.  Add minced garlic towards the end so that it will not taste bitter.
2.  Pour vinegar around the pan obtain the fragrant and chicken will not taste too sour.

Apple Turnover Recipe

Apple Turnover  (make 4)


1.  3 apples
2.  2 tablespoons butter
3.  Some raisins
4.  1 egg
5.  1 sheet puff pastry
6.  3 tablespoons sugar
7.  A pinch of salt
8.  1 tablespoon plain flour
9.  1/2 teaspoon cinnamon powder
10.  some orange zest


1.  Preheat airfryer for 15 mins at 160 degree.

2.  Peel apple and cut apples into cubes.

3.  Melt butter in a pan.

4.  Add apple and raisin.  Stir well.
5.  Add cinnamon powder, sugar, salt and orange zest and stir for a few minutes until apple soften.
6.  Add flour and stir well.

7.  Cut puff pastry into 4 squares.  Put some apples and raisins in the middle of the pastry sheet. Bush some beaten eggs around the pastry sheet and fold it into a triangular shape.

8.  Baked for 15 mins, 160 degree
